Sustainability Matters: Barrel Production

With the growing popularity of barrel-aged spirits and the rise of craft distilleries, there is increasing pressure on the supply of trees. It poses a significant challenge to producing new barrels. We’ve seen a recent decline in American White Oak, a preferred choice for many bourbon distillers.

However, with the surplus of bourbon in 2024, ex-bourbon barrels present a valuable investment opportunity. The demand for barrels has increased in industries such as rum and whisky production, and prices have reached unprecedented levels. Barrel Restoration: A Six-Step Process

Over time, barrels lose structural integrity from natural wear and tear through repeated use. Signs of leakage, loose staves (structural instability), and changes in alcohol characteristics indicate it is time for restoration. The restoration process involves six essential steps to ensure barrels are effectively rejuvenated and ready for use.

01) Internal Scraping: Remove worn wood.

02) External Sanding: Re-open the pores of the wood.

03) Char: A crucial step in barrel restoration is re-toasting or re-charring the barrel. Toasting involves heating the wood gently to release the flavors locked within the oak. Charring is a more intense process that creates a layer of charcoal; it acts as a filter, removing impurities. There are four types of char:

  • Light–Complex finish, woody notes, lower color intensity, a greater influence of tannins
  • Medium–Very complex finish, moderate tannins,  ideal for notes of roasted spices, vanilla, honey, caramel, and chocolate
  • Medium+– Highly complex finishes, higher color intensity, greater influence of aromas of wood and oak
  • Intense (Alligator Char)–Greater influence of nutty and smoky notes


04) Pressing: Seal the barrel to be watertight. During this phase, the metal hoops that hold the staves together are tightened or replaced to ensure a secure fit.

05) Painting: Take care of the rings and achieve tightness.

06) Rehydration: In this final step, the barrel gets tested to ensure no leaks. It is filled with water and monitored over a period. If there are no signs of leaking, the barrel can continue its life cycle.
